Do you love sushi but find it hard to find the energy to make rolls at the end of a long day? If your answer is yes, then this is just what you’ve been looking for! De-constructed sushi – its so much easier and tastes just as delicious! Cook up your favourite rice (we love brown rice, but medium grain white rice is delicious too!), add your favourite sushi fillers – avocado, pickled ginger, wakame salad – or whatever you have at home. Its as simple as that, but here’s how to make it extra special and very classy: open a pack of Sea Shanti’s Sea Crisps and roll as you go. Its fun for kids and adults alike and there’s no lengthy preparations! And lets be honest, with our Sea Crisps smoky seaweed flavour, its even better than the “real thing”.
2 cups short grain brown rice
1 packet Sea Shanti Sea Crisps
150g extra-firm tofu
juice of half a lemon
juice of one orange
2 tbsp sushi vinegar
2 tbsp good quality soy sauce
4 spring onions, chopped
1 avocado, thinly sliced
3 tbsps sesame seeds, toasted
Rinse the rice well a few times. Cook according to instructions on the pack.
Drain the tofu and pat it dry. Cut your tofu lengthwise through the middle to make four slices about 1/2-1cm thick. Cook over a medium heat and fry in a little olive oil until browned on one side, flip and cook for another minute or so, until tofu is golden and bouncy. Let it cool a little and then cut into matchsticks.
Combine orange and lemon juices and add soy and vinegar.
When rice is cooked, stir in 1/3 cup of dressing, add more to taste.
Scoop rice into individual bowls and top with spring onions, avocado slices, tofu, a sprinkling of sesame seeds.
To serve, put the bowl onto a plate and on the side, add some Sea Shanti Sea Crisps.

Variations: You can use any combination of vegetables that you like, e.g. thinly sliced red capsicum, lightly fried oyster mushrooms, or julienne carrots marinated in a little sushi vinegar…
